Cucumber salad recipe:
2 cucumbers π₯
3 eggs π₯
2 medium potatoes π₯
A small bunch of parsley πΏ
A small bunch of chives
3 tbsps of Greek yogurt
1 tbsp of mustard
2 tsps of salt
1/2 tsp of black pepper
Half of a lime
First, boil the potatoes and eggs until they are fully cooked.
Peel and slice the cucumbers and put them in a bowl. Sprinkle 2 teaspoons of salt over the cucumbers and stir. Set aside for 10 minutes.
Meanwhile, peel the eggs and potatoes, cut them into small cubes, and place them in a bowl. After 10 minutes, squeeze the cucumbers by hand and add them to the potatoes. Chop the parsley and chives and add them to the bowl.
To prepare the dressing, put the Greek yogurt and mustard in a bowl and add black pepper. Squeeze the lemon juice and add it to the yogurt. Stir well until the ingredients are fully mixed.
Pour the dressing over the salad and mix well.
