Hereโs how to make my PCOS friendly Zucchini Lasagna โฌ๏ธ
INGREDIENTS
* 4 large zucchini
* 1 Tbsp olive oil
* 1 yellow onion, diced
* 3 cloves garlic, minced
* 1 lb ground beef
* Pinch salt + pepper
* 1.5 c marinara
* Pinch red chili flakes
* 1/2 c ricotta cheese
* 1/2 c shredded mozzarella
DIRECTIONS
– Preheat oven to 350 degrees F
– Cut zucchini in half lengthwise, score in a crosshatch pattern, and scoop out some of the middle of each zucchini half. Set aside.
– In a large pot, saute onions in olive until softened. Add garlic, cook another 1 min, add ground beef and salt and pepper. Cook until browned, then mix in marinara sauce, sprinkle with red chili flakes, and cook another 30 secs.
– Spread ricotta on bottom of each zucchini half, then fill with ground beef mixture. Sprinkle with mozzarella and bake 15 mins. Top with fresh parsley as a garnish and enjoy!
Makes 4 servings: 382 calories, 33 G protein, 20 G carbs, 5.5 G fiber, 21 G fat
